Help filling the gaps in a plot of mine?

I'm writing a fantasy story. I've really been wanting to do something about demon hunters, but I really have been wanting something . . . different. As original as can be. I had this bizarre idea about a creature (a demon, maybe?) that collects sounds. Weird, yes, I know. But I'm not quite sure how to implement it. Ideas, anyone?
